Yoğurtlu Havuç Salatası

Turkish Carrot Salad


This is a delicious salad that can be served as a mezze or side dish.  Its essentially grated carrot with yogurt and garlic.  Try to use a thick yogurt, like Greek yogurt if you can.  This adds a wonderful creaminess that contrasts well with the flavor of the garlic.  Its light and simple and tastes great.




Ingredients  
8 carrots (or about 2-3 large mugs of grated carrots)
4 tablespoons of yogurt
2 garlic cloves
salt
olive oil


Method
Heat a little olive oil in a pan.  Meanwhile, grate the carrots and add them to the pan.  Allow to cook for about 10 minutes till the carrots become wilted.  Turn of the heat and allow to cool.




Separately, crush the garlic with some salt using a mortar and pestle.  Add this along with the yogurt to the cool carrots.  Mix and spread on a plate.  Drizzle with olive oil and garnish.
