Hummus bileela
This is another simple recipe for great chickpeas! I love chickpeas, and could eat them all the time.
Hummus bileela is a dish that combines garlic, cumin and chickpeas, cooked in olive oil and a squeeze of lemon. Its great served warm as part of a mezze, or can be served as a side dish with some grilled chicken/fish.
Ingredients
2 tins chickpeas
2 teaspoons cumin seeds
2 cloves garlic
salt to taste
juice of half a large lemon
olive oil (about2-4 tablespoons)
Method
Mash the garlic with some salt (just over 1 teaspoon or so). Heat up the olive oil and add the garlic. Fry for a few seconds before adding the cumin. Add the chickpeas now and cook for about 5-10 minutes before adding the lemon juice. Cook for a further 5 minutes or so and serve up. Garnish with pine nuts and serve with flat bread!
