Small meat pies
These are little meat pies that are delicious warm, but can also be served at room temperature. They can be served alone, or as part as a mezze.
Ingredients:
For the filling:
1/2kg mince meat
1 onion
2 tomatoes
2 cloves of garlic
2-3 teaspoons baharat/garam masala
1.5 teaspoon chilli flakes (optional)
salt to taste (around 1 teaspoon salt)
pepper to taste
For the dough:
800g self raising flour
teaspoon of salt
1 sachet of yeast/1 teaspoon of baking flour&1 teaspoon of soda
teaspoon of sugar
500ml milk
1 tablespoon olive oil
Method
For the dough, put the flour in a bowl and mix in the sugar, salt, yeast/baking powder&soda. Make a well in the middle, add the oil and the milk. Mix and work into a dough. Add some water/more milk if you need to. You should end up with a dough that has the same consistency as pizza dough. Cover and set aside for about an hour.
For the filling, put the onion and garlic into a food processor and grind till finely cut. Add the rest of the ingredients into a food processor and mix. I sometimes add a drizzle of pomegranate molasses to the meat.
To assemble the pies, pinch off golf ball size pieces of the dough, roll out into a thin disk, about 1/2cm thick. Place about a dessert spoon of the filling in the centre and flatten out a little. Pinch 4 quarters to make small squares. The top of the pastry is left open. You can add a pine nut or two to the top. Brush the edges of the dough with some oil and place in a moderately hot oven (about 180-200C) for about 15-20mins.
Serve with wedges of lemon. Sahteyn :)
