hummus!

Hummus 


Ok so hummus is one of my favorite things in the whole world.  Give me  plate of hummus and a hot flat bread and I'm content. Hummus bi tahini (chickpeas with tahini) to give it its offical Arabic name is a humble dish  that is an essential part of any middle eastern mezze. Its main ingredient is the chickpea. It is usually served on a plate, drizzled with olive oil and eaten with flat bread.  Delicious!  But is also eaten in a number of different forms and varieties.  It can be served topped with meat or pine nuts, or put into shawarma wraps.


  


Ideally it should be creamy, but not runny.  It is flavoured with garlic and lemon juice. and here is my recipe.


Ingredients:


1 can of chick peas
juice of 1 lemon
2 tablespoons of tahini (sesame) paste 
1 desert spoon of yogurt (optional)
2 cloves of garlic
some water if needed.


Method:


1. Slice the garlic thinly and crush with about 1/2 a teaspoon of salt.


2. Put the chickpeas in a blender with the lemon juice, garlic, tahini and yogurt.  Blend to a fine paste.  


3. Depending of the consistency, you may need to add a little water to make the mixture smoother.  be careful no to add too much, you dont want it to become watery.  


4. The consistency should be like a heavy moose.  taste and add more garlic and lemon juice if desired.


5. To serve, spoon the hummus on to a plate and spread using a circular motion to form a moat.  top with some chickpeas and parsley.  sprinke over a dusting of paprika/cumin powder and drizzle with olive oil.  Serve with some hot flat bread. enjoy!


tip: to make the hummus even smoother, you can boil the chickpeas for about 20 mins, allow them to cool and then blend them.
