Scones!
Ok, so I had a sudden urge for something tasty with a cup of tea. I decided to bake some scones!
I love scones, my favorite are the fruit ones and cheese ones, so i decided to make them both.
Fruit scones:
Ingredients
225g self raising flour
50g butter
pinch of salt
30g sugar
50g mixed dried fruit/sultanas
150ml milk
Method
Heat the oven to 220C/gas mark 7. Rub the butter into the flour with your fingertips, till the mixture resembles fine bread crumbs. Add the salt, sugar, fruit and mix. Add the milk and mix the dough. Kneed it a bit and leave to rest for about 10 minutes. Roll out the dough on a flour surface to a thickness of about 2cm. cut into disks using a cutter. Place on a baking tray and brush the tops with a little milk/beaten egg. Place in the oven for about 15 minutes. Put on a wire rack and allow to cool. Serve with butter/jam/cream. And a cup of tea!

teaspoon of salt
25g grated cheddar cheese
150ml milk
Method
Again, combine the flour with the butter till it resembles breadcrumbs. Add the cheese and salt and mix. Now add the milk and mix the mixture. Kneed and let the mixture rest for about 5-10 minutes. Place on a greased baking tray and brush the tops with beaten egg/milk. Put in the oven for about 15 minutes. Serve with butter. These taste great served warm, but also nice at room temperature.
